Yeast - Sopapaillas | |
1 pkg. dry yeast | 4 Cups flour |
1/4 cup warm water | 2 tsp baking powder |
1 1/2 cup scalded milk (warm) | 2 tsp sugar |
3 T. Shortening | 1 tsp salt |
Dissolve yeast in warm water. Add to scalded milk that has cooled. Add milk and yeast into dry ingredients, knead dough until smooth. Cover and let set for 20 minutes. Roll out with rolling pin until thin. Cut into squares. Cook in hot oil until puffed and light brown. Drain onto paper towels.

Sopapaillas without yeast | |
4 cup flour | 4 eggs |
1 tsp salt | 3 TBS sugar |
1 TBS baking powder | warm water or milk |
1 T shortening or lard | salad oil for frying |
Place dry ingredients in a large bowl, cut in shortening until well mixed . Beat eggs, add sugar and add into flour mixture. Add enough water or milk to make a medium dough. Let dough stand 1/2 hour. Roll into 1/4 inch thickness, cut into 1 1/2 inch square and fry in deep fat until golden brown, place on paper towels to drain. For dessert 1/2 sugar and 2 tsp cinnamon and sprinkle or roll hot sopapillas in the sugar cinnamon mixture.
