SOPAPAILLAS (Judith Hubbard)
4 cups flour | 4 eggs |
1 tsp. salt | 1 cup sugar, divided |
2 tsp. baking powder | water or milk |
4 Tbls. fat (lard/shortening) | fat for frying |
1 tsp. cinnamon |
Sift flour with salt and baking powder. Cut fat into flour. Beat eggs, add 1/2 cup sugar, and add to flour mixture. Add enough milk or water to make a dough that is neither stiff or soft.Close window
Let dough stand for 1/2 hour. Roll out 1/4-inch thick, cut into 1-1/2-inch squares and fry in deep fat until brown. Mix the remaining sugar and cinnamon.
As the sopaipillas are fried, drained and still hot, roll in the sugar-cinnamon mixture.
