SOPAPAILLAS (Judith Hubbard)
4 cups flour 4 eggs
1 tsp. salt 1 cup sugar, divided
2 tsp. baking powder water or milk
4 Tbls. fat (lard/shortening) fat for frying
1 tsp. cinnamon  
Sift flour with salt and baking powder. Cut fat into flour. Beat eggs, add 1/2 cup sugar, and add to flour mixture. Add enough milk or water to make a dough that is neither stiff or soft.

Let dough stand for 1/2 hour. Roll out 1/4-inch thick, cut into 1-1/2-inch squares and fry in deep fat until brown. Mix the remaining sugar and cinnamon.

As the sopaipillas are fried, drained and still hot, roll in the sugar-cinnamon mixture.
